" PIRARUCU ASSADO"
(BAKED FISH)


2 pounds fresh pirarucu steaks

Marinade:
3 onions finely chopped
4 garlic cloves, minced
1 bay leaf
juice of 1 lime
salt to taste

5 tomatoes, seeded, peeled and sliced
3 tbs. olive oil

Prepare a marinade with the lime, onion, garlic, bay leaf, and salt. Marinate the fish for 2 hours: arrange the pieces of fish in one single layer in a baking dish, add the marinade, the tomato slices, and drizzle with the olive oil. Bake, uncovered, over a moderate temperature (350° F) for 15 to 20 minutes or until the fish is done.

Serve it hot, with the tomato marinade sauce and white rice.
