"FAROFA DE DENDÊ"
(MANIOC MEAL IN PALM OIL)


1 small onion, chopped
1/4 cup dendê (palm) oil *
2/3 cup manioc meal *
1 ounce (about 1/4 cup) dried shrimp, ground fine (optional)

* available at specialty food stores markets

In a heavy skillet cook the onions in the oil over low heat until softened. Stir in the manioc meal gradually and cook the mixture, stirring, for 5 minutes. Remove the skillet from the heat and stir in the shrimp and salt to taste.
